From time to time, we receive recipes from the people who enjoy our olive oil – and we are always looking for new ones!

If you have a recipe you like, using one of our oils, please send it along to us, with a proof of purchase of the product you use.

NEW Recipe!
Roasted Cauliflower with Lakelands Olives Frantoio Olive Oil
(from Marilyn Davidson of Minnetonka, Minnesota)

Cook Time: Approx. 1 hour
Oven Temperature: 400 degrees Fahrenheit

INGREDIENTS:
One head of Cauliflower, cut into wedges
Lakelands Olives Frantoio Olive Oil

Place on parchment paper on baking sheet
Drizzle with Frantoio olive oil
Cover with tinfoil and cook covered for 15 minutes
Remove tinfoil
Flip wedges and season with salt & pepper
Re-drizzle with Frantoio olive oil
Cook uncovered for 40 to 45 more minutes, flipping 2 more times
Re-drizzle with Frantoio olive oil (if necessary) and Serve Immediately

Should be toasty brown when done!

 

Pasta LoBalbo
(from Nancy LoBalbo of Bethel, CT)

INGREDIENTS:
· 6 Cloves Diced Garlic (or 3 tsp's pre-crushed), or more if to your taste
· 1/4 Cup Salvatore Mirisola Olive Oil
· 1 ½ - 2 Cups Chicken Stock (or canned broth)
· 1 # spaghetti or linguini pasta
· Freshly ground pepper (for garnish), to taste
· Grated Parmesan or Romano (to garnish), to taste

Heat the Mirisola Oil in a small skillet - do not overheat!
Add garlic, saute over medium heat until browned

Meanwhile - boil the Pasta until tender but still firm
Drain the pasta and transfer it back to the pot

Add the Chicken Stock to the pasta and simmer for about 5 minutes

When cooked, stir in the Mirisola Oil and Garlic - toss thoroughly with pepper and grated cheese

SERVES 4

Tomatoes Gelsomini
(from Fabio Gelsomini of Toronto, Canada)

Ingredients:
4-5 medium size vine-grown Tomatoes
8 - 10 oz FRESH Mozzarella
1/4 - 1/3 cup Salvatore Mirisola Olive Oil
2 tbs FRESH chopped Cilantro
2 tsp good quality Balsamic Vinegar
1/8 tsp salt (optional)
1 tbs freshly ground pepper
2 cloves garlic, finely chopped
¼ tsp of sugar
¼ tsp of curry powder

Set aside the Mozzarella for slicing later
Place sliced tomatoes in a bowl
Combine all other ingredients in a tight jar and shake
Pour the mixture over the tomatoes

Cover and refrigerate for 3 hours.

Before serving, layer tomatoes with sliced cheese and salad greens (if desired) and serve!

SERVES 8
