Two distinctly different oils one great package...
We are offering two distinctly different products from the wonderful Lakelands Olives estate in New South Wales, Australia.
Specific bottlings of the Frantoio olives. THIS IS RARE; generally olive oils are blends of several oils.
But DO try the Special Reserve: a blend of the best of several olive varieties, all grown at our estate in true Organic method.
In 2004, Lakelands Olives Oils were assessed by Richard Gawel, the Chief Judge of Australia's International Olive Oil Council Tasting Panel.
Here are Mr. Gawel's notes:
Frantoio
"Intense aromas of salad leaf and artichoke. Initially the flavours are sweet with green almonds but continue to display more herbal flavours. Balanced bitterness that builds together with a chili-like tight pungency. Excellent aroma and flavours in this well balanced, medium to robust oil."
In growing our olives organically, we seek to work with nature rather
than against it, aiming to achieve a system that is healthy and sustainable...
Excessive use of chemicals like herbicides, pesticides and some fertilizers
in 'modern agriculture' may contaminate soil and water and endanger animals and
humans. Recent research links these chemicals to cancer and other diseases.
Organic farming is still mainly based upon labor-intensive practices
such as weeding by hand, composting, mulching and other traditional techniques.
Organic farmers know that they must reintroduce and maintain areas
with biodiversity and encourage life with an abundance of nutrients in the soil,
which produces healthy plants.
Healthy plants which are well supplied with minerals can make all
the flavor producing substances they need.
Many chefs use organic foods because they are well cared for during
their production and simply taste better.
Since 1999 we are following strictly controlled organic farm management
principles. In May 2002, we have been certified 'Grade A Organic' by Biological
Farmers of Australia (BFA), an Australian government- regulated, certifying organization.
We decided, in 2001, to incorporate Biodynamic farming principles based
on standards set by Biodynamic AgriCulture Australia. We were certified BioDynamic
in June 2004 by ACO, a subsidiary of BFA.
It is our vision and commitment to develop a truly
sustainable natural and ecological agriculture in our grove. Following our principles,
all our glass bottles and corrugated packaging are made from recycled materials.
Lakeland Olives organic olive oils... reflect the varietal characteristics
and maturity of the olives used, resulting in distinctive and exciting flavors.
They are best used as dressings and for delicate cooking.
Be innovative and explore the flavor of Lakelands oils on pasta,
fish, in vegetable soups, salads, in marinades and with many
other healthy and tasty dishes.
Free fatty acids (FFA) are an indicator of oil quality. FFA
levels for Extra Virgin oils have to be below 0.8% according
to international standards. Lakeland produces oils with FFA levels well below, thus providing
oils of the highest quality.
Olive oil deteriorates with exposure to air and light. We recommend
keeping it in an air-tight bottle or container protected from
heat and light.
